Air fryer Asparagus and Ricotta Tart
This savory vegetable tart is the perfect side dish. A delicious Asparagus Pie topped with a cheesy mixture with a kick to it. This was cooked to perfection in the air fryer! I had to modify the recipe to fit in there, but it wasn't a big deal. Here is the authentic Air Fryer recipe.

Ingredients
- 1 sheet frozen puff pastry, thawed
- 1 large egg, beaten
- 1 cup ricotta cheese
- Kosher salt
- Pepper
- Lemon zest
- 2 scallions, chopped
- 1/4 cup fresh parsley, chopped
- 12 oz asparagus, trimmed
- 1/2 tbsp olive oil
Directions
- Preheat at 400°F for 3 minutes
- Roll up a 1/2-inch border on all sides
- Brush the borders with beaten egg
- Mix beaten egg, ricotta cheese, salt, pepper, lemon zest, and scallion
- Spread the mixture onto the pastry
- Cut the asparagus in half
- Top the pastry with halved asparagus
- Drizzle with olive oil
- Air fry at 400°F for 15 minutes
