Ingredients
1 sheet frozen puff pastry, thawed
1 large egg, beaten
1 cup ricotta cheese
Kosher salt
Pepper
Lemon zest
2 scallions, chopped
1/4 cup fresh parsley, chopped
12 oz asparagus, trimmed
1/2 tbsp olive oil
Directions
Preheat at 400°F for 3 minutes
Roll up a 1/2-inch border on all sides
Brush the borders with beaten egg
Mix beaten egg, ricotta cheese, salt, pepper, lemon zest, and scallion
Spread the mixture onto the pastry
Cut the asparagus in half
Top the pastry with halved asparagus
Drizzle with olive oil
Air fry at 400°F for 15 minutes
