AIR FRYER FAJITA STUFFED CHICKEN
We had all of the fixings for fajitas, but instead of using my large oven, we decided to try a new variation in the air fryer. We wanted to pack each stuffed chicken breast with as much stuffing as possible because my air fryer is small. Cutting slits in the breasts and then filling them worked well.

Ingredients
- 4 boneless skinless chicken breast
- 1 small onion, thinly sliced
- 1/2 medium green pepper, thinly sliced
- 1 tbsp olive oil
- 1 tbsp chili powder
- 1 tsp ground cumin
- 1/2 tsp salt
- 1/4 tsp garlic powder
- 4 slices Cheddar cheese
Directions
- Preheat at 375°F for 3 minutes
- Cut a pocket horizontally in the chicken breast
- Fill with onion and green pepper
- Mix olive oil, chili powder, ground cumin, salt, and garlic powder
- Brush the chicken with the seasoning mixture
- Secure with toothpicks
- Spray with olive oil
- Air fry at 375°F for 8 minutes
- Top with cheese
- Cook for another 6-10 minutes
- Discard toothpicks
