This simple and straightforward pumpkin cake recipe is for those of us who want nothing but pumpkin and spice flavors. Brown sugar and 2 cups pumpkin puree promise plenty of flavor and a moist texture. It's delicious on its own, but the smooth and tangy cream cheese frosting on top is out of this world!

Ingredients
- ½ cup sugar
- 2 large eggs
- ½ cup olive oil
- 1 cup pumpkin puree
- 1 ¼ cup flour
- 1 tsp baking powder
- 1 tsp cinnamon
- ½ tsp nutmeg
- 1 cup whipped cream
- ½ cup pecans, chopped
- 1 tbsp unsalted butter, softened
Directions
- In a medium bowl, add the sugar, eggs, olive oil, pumpkin puree and mix well.
- Then, add the flour, baking powder, cinnamon, and nut meg. Mix well until smooth.
- Grease the baking pan and add the mixture.
- Put the baking pan in the air fryer and cook at 320F for 30 mins
- Use a toothpick to check if the cake is ready
- Allow the cake to cool for 15 mins
- Top the cake with whipped cream and pecans
