Coconut Shrimp in an Air fryer
Coconut shrimp are incredibly simple to prepare and taste just as good as, if not better than, one of your favorite restaurant appetizers. These healthy fried coconut shrimp are made in the air fryer with only a few ingredients and don't require a lot of oil. Shrimp in the air fryer is quick and simple to prepare, and this dish is one of my favorites!

Ingredients
- 1 pound raw large shrimp
- ¼ cup all-purpose flour
- ½ tsp salt
- ¼ tsp black pepper
- 2 large eggs
- ¾ cup shredded coconut
- ¼ cup breadcrumbs
- Cooking spray
- Sweet chili sauce
Directions
- Preheat at 350˚F for 3 minutes
- Spray with nonstick cooking spray
- Wash and peel shrimps
- Remove the internal organs and save the tail
- Combine flour, salt, pepper
- Whisk eggs until smooth
- Combine shredded coconut and breadcrumbs
- Coat the shrimps with a flour mixture
- Dip into the eggs
- Coat with breadcrumbs and shredded coconut mixture
- Air fry at 360˚F for 5 minutes
- Flip and cook for another 5 minutes
- Enjoy it with sweet chili sauce
