2 slices of white bread
6 hard-boiled eggs, peeled
4 tbsp Greek yogurt
1 tsp yellow mustard
1 lettuce leaf
1 tbsp finely chopped fresh chives
salt and pepper, to taste
curry powder, to taste
Directions
Mash the eggs with a fork.
Mix yellow mustard, Greek yogurt, chives, salt, pepper, and curry powder.
Toast the bread.
Layer lettuce on the bread.
Spread the egg mixture.
Top with another slice of bread
