Ingredients
1 large eggplant mine weighed around 1.25 lb
1/2 cup whole wheat bread crumbs
3 tbsp finely grated parmesan cheese
salt to taste
1 tsp Italian seasoning mix
3 tbsp whole wheat flour
1 egg + 1 tbsp water
olive oil spray
1 cup marinara sauce
1/4 cup grated mozzarella cheese
fresh parsley or basil to garnish
Directions
Cut eggplant into roughly 1/2 inch slices. Rub some salt on both sides of the slices and leave it for at least 10-15 mins.
Meanwhile in a small bowl mix eggs with water and flour to prepare the batter. At the same time, in a small bowl, mix the eggs, water and whole wheat flour)
In a medium shallow plate combine bread crumbs, parmesan cheese, Italian seasoning blend, and some salt. Mix thoroughly. In a shallow dish, mix bread crumbs, Parmesan cheese, Italian seasoning and salt thoroughly)
