Ingredients

  • 1 pound large shrimp, peeled and deveined
  • 1/2 cup all-purpose flour
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 2 eggs, beaten
  • 1 cup panko breadcrumbs
  • 1 cup sweetened shredded coconut
  • Cooking spray
  • Sweet chili sauce, for serving

Directions

  1. Preheat your Ultrean air fryer to 400°F.
  2. In a shallow dish, whisk together the flour, salt, and black pepper.
  3. In another shallow dish, beat the eggs.
  4. In a third shallow dish, mix together the panko breadcrumbs and shredded coconut.
  5. Coat each shrimp in the flour mixture, then dip in the beaten eggs, and finally coat in the breadcrumb mixture.
  6. Spray the air fryer basket with cooking spray
  7. Arrange the coated shrimp in a single layer in the air fryer basket.
  8. Cook for 8-10 minutes, flipping halfway through, until the shrimp are crispy and cooked through.
