They're very similar to our air fryer zucchini chips, except they're made with a different vegetable as the main ingredient. Slicing them thickly will give them more texture and oomph. Thinner slices will be more crispy, similar to potato chips.

Ingredients

1 cucumber
-
1/4 cup flour
-
1 egg, whisked
-
1 cup breadcrumbs

Salt and pepper to taste
Directions
Preheat at 350°F for 3 minutes.
Slice the cucumber into about 1/4" thick.
Mix breadcrumbs, salt, and pepper.
Dip each cucumber slice in the flour, then the egg, then coat with breadcrumbs.
Spray with olive oil
Air fry at 350°F for 8 minutes
Flip halfway through cooking
