Air fryer Cucumber Chip
Crispy breaded cucumber chips are a delicious way to eat vegetables as a snack. Vegetarian, flavorful, and crunchy.
They're very similar to our air fryer zucchini chips, except they're made with a different vegetable as the main ingredient. Slicing them thickly will give them more texture and oomph. Thinner slices will be more crispy, similar to potato chips.

Ingredients
- 1 cucumber
- 1/4 cup flour
- 1 egg, whisked
- 1 cup breadcrumbs
- Salt and pepper to taste
Directions
- Preheat at 350°F for 3 minutes.
- Slice the cucumber into about 1/4" thick.
- Mix breadcrumbs, salt, and pepper.
- Dip each cucumber slice in the flour, then the egg, then coat with breadcrumbs.
- Spray with olive oil
- Air fry at 350°F for 8 minutes
- Flip halfway through cooking
