These Hasselback Potatoes are created with colorful potatoes that are finely sliced (but not cut) and roasted till tender on the inside and golden brown on the exterior with butter, garlic, herbs, and cheese. They're a show-stopping side dish that's ideal for entertaining on weekends!

Ingredients
- 4 russet potatoes, scrubbed
- 2 tsp olive oil
- 2 tsp garlic powder
- 2 tsp salt
- 1 tsp onion powder
- 1 tsp dried parsley
- 1 tsp black pepper
- 8-10 slices of Cheddar cheese, cut into quarters
Directions
- Preheat at 350°F for 30 minutes
- Cut the potatoes into 1/4-inch thick slices without cutting through the bottom
- Mix olive oil, garlic powder, salt, onion powder, parsley in a bowl
- Brush the potatoes with the seasoning mixture
- Air fry at 350°F for 20 minutes
- Brush with the seasoning mixture again
- Cook for an additional 20 minutes
- Place the cheese slices in the cuts of the potatoes
- Cook for 2 minutes
