These stuffed sweet potatoes are the ideal Thanksgiving side dish. Try making them ahead of time in the morning and baking them right before serving.

Ingredients

  • 2 medium-large sweet potatoes, washed
  • 1 cup cooked chopped spinach, drained
  • 2 cooked bacon strips, crumbled
  • 1 scallion, chopped
  • 1/3 cup chopped pecans, toasted
  • 1/4 cup dried cranberries
  • 3/4 cup Cheddar cheese, shredded
  • 1 tsp olive oil
  • 2 tbsp butter, melted
  • 1/4 tsp kosher salt
  • 1/4 tsp pepper

Directions

  1. Preheat at 400°F for 3 minutes
  2. Brush sweet potatoes with olive oil
  3. Air fry at 400°F for 30-40 minutes
  4. Cool slightly
  5. Cut sweet potatoes in half
  6. Scoop out pulp
  7. Leave a 1/4-inch thick shell
  8. Mash the potato pulp
  9. Mix Cheddar cheese, spinach, bacon, scallion ,cranberries, pecans, butter, salt, and pepper.
  10. Spoon into potato shells
  11. Air fry at 360°F for 10 minutes

When do you add the mashed sweet potato back into the shell? Do you mix it with the other ingredients, serve separately? It is a little confusing.
