Ingredients
- 2 medium zucchinis
- 1/2 small onion, chopped
- 1 small carrot, diced
- 2 tbsp tomato sauce
- 1 garlic clove, pressed
- 2 tbsp olive oil
- 4 oz ground beef
- 1/2 tsp salt
- 1/8 tsp black pepper
- 1/2 cup grated Parmesan cheese
Directions
- Preheat at 400°F for 3 minutes
- Cut zucchinis in half
- Scoop out the flesh
- Leave a 1/4-inch thick shell
- Chop the zucchini flesh into small pieces
- Heat the pan, add 1 tablespoon of olive oil, zucchini flesh, onion, carrot, and garlic. Cook for 3-4 minutes, stirring frequently.
- Transfer the veggie mixture to a plate
- Heat the pan again, add 1 tablespoon of olive oil and ground beef. Cook for 4-5 minutes.
- Remove from heat
- Mix cooked vegetables, tomato sauce, salt, and pepper.
- Spoon the filling into zucchini shells
- Air fry at 400°F for 20 minutes, adding cheese halfway through cooking
