Ingredients
2 medium zucchinis
1/2 small onion, chopped
1 small carrot, diced
2 tbsp tomato sauce
1 garlic clove, pressed
2 tbsp olive oil
4 oz ground beef
1/2 tsp salt
1/8 tsp black pepper
1/2 cup grated Parmesan cheese
Directions
Preheat at 400°F for 3 minutes
Cut zucchinis in half
Scoop out the flesh
Leave a 1/4-inch thick shell
Chop the zucchini flesh into small pieces
Heat the pan, add 1 tablespoon of olive oil, zucchini flesh, onion, carrot, and garlic. Cook for 3-4 minutes, stirring frequently.
Transfer the veggie mixture to a plate
Heat the pan again, add 1 tablespoon of olive oil and ground beef. Cook for 4-5 minutes.
Remove from heat
Mix cooked vegetables, tomato sauce, salt, and pepper.
Spoon the filling into zucchini shells
Air fry at 400°F for 20 minutes, adding cheese halfway through cooking
