Garlic & Parsley Mushroom Toast
Mushrooms on toast is a hearty savory dish that is popular among British and other Anglophone cooks. If you use ordinary cultivated mushrooms, it's inexpensive and delicious, and it's suitable for any meal of the day: breakfast, lunch, tea, dinner, or late snack. One pound of mushrooms will suffice for two servings.

Ingredients
- 2 garlic cloves, minced
- 1 cup mushrooms, sliced
- ½ tsp dried parsley
- 2 slices of bread
- 2 tbsp Greek yogurt
- Salt and pepper, to taste
- 1 tbsp olive oil
Directions
- Heat up the pan on medium heat
- Spray with olive oil
- Saute the garlic for 3 minutes
- Add in mushrooms and saute for 5 minutes
- Add dried parsley, salt and pepper. Then saute for another 3 minutes
- Toast the bread
- In a medium bowl, add the yogurt, pepper and salt, then mix well.
- Spread each slice with the yogurt mixture
- Top with the cooked mushrooms
