If you follow this step-by-step process on how to make homemade Granola Bars you can control the sweetness and add more with your own combination of flavors. Just follow these easy steps if you want your granola bars to have chewy texture.

Ingredients
1 1/2 cups old fashioned oats
1/2 cup oat flour (or 1/2 cup old fashioned oats pulsed in a food processor until finely ground)
1/2 teaspoon salt
1/4 teaspoon ground cinnamon
3/4 cup raw almonds, rough chopped
3/4 cup raw pumpkin seeds
1/2 cup dried cherries, rough chopped
1/2 cup unsweetened coconut flakes
1/3 cup creamy almond butter
1/3 cup coconut oil
1/2 cup honey
2 tablespoons corn syrup
2 teaspoons vanilla extract
Directions
Preheat the Airfryer oven to 325°F before baking. Put a parchment paper into the baking pan and leave enough edge on 2 opposite sides to lift the bars out of the pan once they have cooled.
In a large bowl, put together the oats, oat flour, salt and cinnamon then mix until its perfectly blend.
In a bowl with oat mixture, add the chopped almonds, pumpkin seeds, chopped dried cherries, and unsweetened coconut flakes.
Then, put the small pan into medium heat and combine the almond butter, coconut oil, honey, and corn syrup using a heat proof spatula. Continue stirring for about 1 minute to ensure that the nut butter does not burn. After a minute, remove the pan from the heat, pour the vanilla extract and stir.
Mix the wet ingredients into the oat mixture, and use a rubber spatula to combine until its perfectly coated. Then, transfer the granola mixture to the parchment-lined baking pan. At the top of the mixture, place a piece of parchment paper and using your hands, spread and press the mixture evenly into the pan. To firmly press the mixture down, use the bottom of a cup until it is even. If the mixture is completely even, and flat, remove the top piece of parchment.
Put the bars in the oven and bake for about 25 minutes until the edges begin to turn to golden brown.
Then, remove the pan from the oven and place the bar on a cooling rack for about 30 minutes. Afterwards, transfer the uncovered pan to the fridge for another 30 minutes.
Using the parchment paper, pull the granola bars out of the baking pan and put to a cutting board. Then, cut into 12 bars using chef's knife.

These turned out just perfect, I used peanut butter and dried cranberries as that was what I had on hand and I couldn’t wait to give them a try. The only downside is that they are so yummy they are almost gone on day 3 when I thought they would last for 10 days of school snacks :-) Maybe they will last longer once we get used to them, LOL.
