2 cups all-purpose flour
4 tablespoons vegetable oil
1/2 teaspoon salt
Water, as needed

2 medium potatoes, boiled and mashed
1/2 cup green peas, boiled
1 small onion, finely chopped
2 cloves garlic, minced
1 teaspoon grated ginger
1 green chili, finely chopped (adjust to taste)
1 teaspoon cumin seeds
1 teaspoon coriander seeds, crushed
1/2 teaspoon turmeric powder
1 teaspoon garam masala
1/2 teaspoon red chili powder (adjust to taste)
2 tablespoons vegetable oil
Salt, to taste
Fresh cilantro leaves, chopped (for garnish)
Air Fryer cooking spray or oil

In a mixing bowl, combine the all-purpose flour, salt, and vegetable oil. Mix well.
Gradually add water while kneading to form a smooth and stiff dough. Cover it with a damp cloth and set it aside for about 20-30 minutes.

Heat oil in a pan over medium heat. Add cumin seeds and crushed coriander seeds. Let them splutter.
Add chopped onions, minced garlic, grated ginger, and green chilies. Sauté until the onions turn translucent.
Add turmeric powder, garam masala, red chili powder, and salt. Stir well.
Add boiled mashed potatoes and boiled peas. Mix thoroughly and cook for 5-7 minutes. Remove from heat and let it cool.

Divide the dough into equal-sized balls. Roll each ball into a thin oval or circle.
Cut the circle in half. Take one half and form a cone by folding and sealing the edges with water.
Fill the cone with the prepared potato-pea mixture. Seal the top edge tightly to enclose the filling, forming a triangular shape.
Preheat the air fryer at 350°F (180°C) for 5 minutes.
Lightly grease the samosas with cooking spray or brush them with oil.
Place the samosas in the air fryer basket in a single layer, leaving some space between each samosa.
Air fry at 350°F (180°C) for 10 minutes, then flip the samosas and air fry for an additional 5-7 minutes or until they turn golden brown and crisp.

Once done, remove the samosas from the air fryer and let them cool for a few minutes.
Garnish with freshly chopped cilantro leaves and serve hot with mint chutney or tamarind sauce.
