Air fryer Beef Empanadas
Puff pastry is wrapped around well-seasoned ground beef and cooked in the air fryer to make the crispiest empanadas you've ever had. It takes just under an hour to make these delectable snacks, which are ideal for snacking on the go or as an appetizer.

Ingredients
- 1 tbsp olive oil
- 1/4 pound lean ground beef
- 1/4 cup diced white onion
- 1/4 cup chopped red bell pepper
- 1 tsp ground cumin
- 1/2 tsp sweet paprika
- 1/4 tsp dried oregano
- 1/4 tsp ground black pepper
- 1/4 tsp salt
- 1 package of puff pastry, cut into rounds
- 2 garlic cloves, minced
- 1 egg
- 1 tbsp water
Directions
- Preheat at 390°F for 3 minutes
- Heat oil over medium-high heat
- Add beef and saute to brown
- Add white onion and red bell pepper to the beef
- Saute for 4 minutes
- Add garlic, salt, black pepper, oregano, cumin, and paprika. Saute to mix well.
- Drain oil and transfer beef to a bowl
- Place 1-2 tablespoons of filling on each puff pastry round
- Fold over and pinch edges to seal
- Crimp edges with a fork
- Whisk an egg with water
- Brush each empanada with egg wash
- Spray with cooking spray
- Air fry at 325°F for 15 minutes
- Flip halfway through cooking
