Air fryer Broccoli & Cheese Baked Potatoes

This side dish combines two of your favorite potato dishes. Tender baked potato halves are topped with a creamy Cheddar cheese and broccoli filling before being air-fried for crispy skins. Air fryers use far less oil than deep fryers, allowing for an extra sprinkle of cheese.

Ingredients

  • 2 medium russet potatoes, scrubbed
  • 1 cup milk
  • 2 tbsp all-purpose flour
  • ½ cup shredded Cheddar cheese
  • 1 cup chopped broccoli florets
  • ¼ tsp salt
  • ¼ tsp paprika

Directions

  1. Pierce potatoes all over with a fork
  2. Drizzle olive oil and sprinkle salt on the potatoes
  3. Rub to coat
  4. Air fry at 350°F for 25-35 minutes
  5. Flip halfway through cooking
  6. Meanwhile, let's make the broccoli topping
  7. Whisk milk and flour until smooth
  8. Cook over medium-high heat, and constantly stir until smooth
  9. Mix Cheddar cheese, broccoli, salt, and paprika
  10. Cut the potatoes in half lengthwise
  11. Top with broccoli mixture
  12. Sprinkle with Cheddar cheese
  13. Air fry at 350°F for 5 minutes
