Air fryer Broccoli & Cheese Baked Potatoes
This side dish combines two of your favorite potato dishes. Tender baked potato halves are topped with a creamy Cheddar cheese and broccoli filling before being air-fried for crispy skins. Air fryers use far less oil than deep fryers, allowing for an extra sprinkle of cheese.

Ingredients
- 2 medium russet potatoes, scrubbed
- 1 cup milk
- 2 tbsp all-purpose flour
- ½ cup shredded Cheddar cheese
- 1 cup chopped broccoli florets
- ¼ tsp salt
- ¼ tsp paprika
Directions
- Pierce potatoes all over with a fork
- Drizzle olive oil and sprinkle salt on the potatoes
- Rub to coat
- Air fry at 350°F for 25-35 minutes
- Flip halfway through cooking
- Meanwhile, let's make the broccoli topping
- Whisk milk and flour until smooth
- Cook over medium-high heat, and constantly stir until smooth
- Mix Cheddar cheese, broccoli, salt, and paprika
- Cut the potatoes in half lengthwise
- Top with broccoli mixture
- Sprinkle with Cheddar cheese
- Air fry at 350°F for 5 minutes
