Ingredients
2 boneless, skinless chicken breasts
4 slices of fresh mozzarella cheese
4 slices of ripe tomato
4 fresh basil leaves
1 tablespoon of olive oil
1/2 teaspoon of salt
1/4 teaspoon of black pepper
1/2 teaspoon of Italian seasoning
Directions
Preheat your air fryer to 380°F (190°C) for 5 minutes.
Slice each chicken breast horizontally to create a pocket without cutting all the way through.
Season the chicken breasts with salt, black pepper, and Italian seasoning, both inside and outside.
Stuff each chicken breast with 2 slices of mozzarella cheese, 2 slices of tomato, and 2 basil leaves.
Use toothpicks to secure the openings of the chicken breasts and keep the filling in place.
Brush the chicken breasts with olive oil on both sides.
Place the stuffed chicken breasts in the air fryer basket, making sure they are not touching.
Cook the chicken breasts in the air fryer at 380°F (190°C) for 20-25 minutes, or until the chicken is cooked through and the cheese is melted and bubbly.
Remove the chicken breasts from the air fryer and let them rest for a few minutes before serving.
Recipe Note
- Be careful when handling the toothpicks. Make sure to remove them before serving.
- Feel free to serve the Caprese stuffed chicken breast with a side of fresh salad or roasted vegetables for a complete and balanced meal.
- You can customize the filling by adding other ingredients like roasted red peppers, sun-dried tomatoes, or even a drizzle of balsamic glaze for added flavor.
- If you prefer a crispier exterior, you can spray or brush the chicken breasts with cooking oil before placing them in the air fryer.
- Make sure to check the internal temperature of the chicken using a meat thermometer to ensure it reaches a safe temperature of 165°F (74°C).
- Adjust the cooking time slightly based on the thickness of the chicken breasts to ensure they are fully cooked.
- Allow the chicken breasts to rest for a few minutes after cooking to retain their juiciness before slicing and serving.
