Ingredients
- 1 sweet potato, peeled
- 1 beetroot, peeled
- 1 zucchini
- 1 carrot
- 2 tbsp olive oil
- 1 tsp salt
- 1/2 tsp pepper
- pinch of cumin
Directions
- Preheat at 320°F for 3 minutes
- Slice the sweet potato, about 1/16-inch thick
- Soak the slices for 30 minutes
- Slice beet, zucchini, and carrot
- Dry the sweet potato slices with paper towels
- Mix sweet potato, beet, zucchini, carrot, olive oil, salt, pepper, and cumin.
- Place the veggies in a single layer
- Air fry at 320°F for 20-30 minutes
- Flip the veggies every 5 minutes until crispy
