Ingredients
1 1/2 pounds chicken breast
1 cup pickle juice
1 cup all-purpose flour
1 teaspoon garlic powder
2 teaspoons kosher salt
1 teaspoon black pepper
3 large eggs
1 1/2 cups plain or Italian breadcrumbs
Nonstick spray, for cooking
For easy honey mustard sauce
1/2 cup Dijon mustard
1/4 cup honey
Directions
Cut the chicken breast into 1 -inch long and 1/2 -inch thick, nugget-sized pieces. It should resemble more of a plank than a cube. Place the nuggets in a bowl and pickle then marinate for 30 minutes or up to 1 hour. ๐ฟ๐ค ๐ฃ๐ค๐ฉ ๐ข๐๐ง๐๐ฃ๐๐๐ ๐ฉ๐๐ ๐ฃ๐ช๐๐๐๐ฉ๐จ ๐๐ฃ๐ฎ ๐ก๐ค๐ฃ๐๐๐ง ๐ค๐ง ๐ฉ๐๐๐ฎ ๐ฌ๐๐ก๐ก ๐๐๐๐ค๐ข๐ ๐ ๐ข๐๐จ๐จ.
Prepare three medium bowls and in the first bowl, combine flour, garlic powder, salt, and pepper. Then, whisk eggs until smooth in the second bowl. Lastly, add breadcrumbs to the third bowl.
Remove the nuggets from the pickle juice and pat them with dry paper towels.
Add to flour mixture and coat well the nuggets (๐๐ค๐ง๐ ๐๐ฃ๐ ๐ฌ๐๐ฉ๐ ๐ ๐๐๐ฌ ๐ฃ๐ช๐๐๐๐ฉ๐จ ๐๐ฉ ๐ ๐ฉ๐๐ข๐), followed by eggs letting any excess egg drip off, then, finally fully coat with breadcrumbs for crispier nuggets.Spray it with nonstick cooking spray. Then, put the nuggets in a single layer with in-between space on each nugget. Set the air fryer temperature at 350ยฐF for 6 minutes. Flip each side and make sure to cook for another 5-6 minutes after flipping.
For the sauce, you can dip the nuggets to mayonnaise, honey mustard, or ketchup. Serve the nuggets while warm with your dip choice.
