Tostones can be kids favorite if you serve it with ketchup! It is a yummy chip appetizer in Puerto Rico.

Ingredients
1 cup mayonnaise
1/4 cup ketchup
1/4 teaspoon garlic powder
3 medium green plantains
4 cups water
1 tablespoon kosher salt
3 tablespoons neutral cooking oil (vegetable, peanut, or coconut oil)
Coarse salt for sprinkling

Directions
Combine together the mayonnaise, ketchup, and garlic powder for the dipping sauce. Place a cover and store in refrigerator until ready to serve. Preheat the air fryer 350°F.
Cut the ends of green plantains using kitchen knife. Peel and cut the plantain down its back side and use the portly part of your thumb then push the peel up and away from the plantain.
In a medium bowl, combine 4 cups of cold water and 1 tablespoon of kosher salt. Cut the plantain into 1 1/2-inch-thick chunks and soak them in water for 20 minutes. (It will prevents browning and keeps from drying out while cooking.)
Remove the plantains from soaking and dry each one thoroughly. Coat the plantain with cooking oil, make sure to coat each plantain. Place the plantain into the air fryer's basket. Leave 1/2 inch space in each side of slices to circulate the air properly. Cook for about 3-6 minutes per side.
Increase the temperature into 400°F. Remove the plantain slices from the air fryer basket and smash each one using tostonera or use parchment paper and smash it using coffee mug. It should be as flast as 1/4 inch thick disc that holds together.
Put back the plantains into air fryer basket. Fry for 3 minutes on the first side and 3-4 minutes on the other side.
Remove the plantains from the air fryer basket after cooking and serve with mayoketchup dip sauce.
