Air fryer Tortilla Chips with Cucumber Dip
Homemade tortilla chips are far superior to store-bought. They have a crispy bite that you won't find in a bag.
The best flavor comes from deep frying your chips, but I don't do that in my house. Even when you think it isn't, grease splatters everywhere and makes a mess. Now that I have an air fryer, I can enjoy healthier fried foods without the mess.

Ingredients
- 8 small corn tortillas
- 2 tbsp olive oil
- salt, to taste
- 1 ½ cup Greek Yogurt
- 2 tbsp fresh mint, minced
- 2 garlic cloves, minced
- 2 tbsp olive oil
- 1 tbsp lemon juice
- 1 tsp paprika
- ½ tsp salt
- 1 cucumber
Directions
- Preheat at 350°F for 3 minutes
- Brush both sides of tortilla with olive oil
- Sprinkle with salt
- Slice the tortillas into 6-8 equal pieces
- Air fry at 350°F for 3 minutes
- Flip the tortillas
- Spray with cooking spray
- Cook for another 2-3 minutes
- Then prepare the cucumber dip
- Peel, seed and shred the cucumber
- Squeeze the excess water
- Mix Greek yogurt, mint, garlic, olive oil, lemon juice, paprika, and salt
- Dip the tortilla chips in the cucumber sauce and enjoy
